Add olive oil and chopped garlic clove, and onion to skillet.
Cook until onion is translucent.
Add ground turkey and cook on medium until meat is cooked all the way through
Sprinkle meat with cumin, chili powder, salt, and pepper to your liking. I add about 1-2 tbsp of cumin and 1-2 tbsp chili powder.
Add sweet potatoes, brussel sprouts, and 1/2 cup water to skillet. Cover skillet with a lid and cook about 8-10 minutes or until brussel sprouts and sweet potatoes are soft. Stir occasionally. You may need to add more water to make sure meat doesn’t dry out.
Once the veggies are cooked I sprinkle on a little more cumin and chili powder. Then top with freshly grated cheese, wait for it to melt and then dig in!
