Heat saute pan to medium and add olive oil and minced garlic.
Add chopped bell peppers and onion and cook until onions are translucent. About 4-5 minutes.
Add shredded chicken to a bowl. Add cheese, cumin, paprika, chili powder, and salt and pepper to taste. Add the cooked peppers and onions and mix until combined.
Spoon about 3 tbsp of mixture onto the lower third of a tortilla. Roll up tightly and lay tortilla seam side down on air fryer sheet. Repeat with all tortillas.
Spray tortillas lightly with olive oil or avocado oil and sprinkle with a little sea salt or garlic salt.
Air fry at 350° F for about 7 minutes or until they are just barely golden brown.
Serve with guacamole, salsa, lime, cilantro, and sour cream.
