Ingredients
Method
- Heat saute pan to medium and add olive oil and minced garlic.
- Add chopped bell peppers and onion and cook until onions are translucent. About 4-5 minutes.
- Add shredded chicken to a bowl. Add cheese, cumin, paprika, chili powder, and salt and pepper to taste. Add the cooked peppers and onions and mix until combined.
- Spoon about 3 tbsp of mixture onto the lower third of a tortilla. Roll up tightly and lay tortilla seam side down on air fryer sheet. Repeat with all tortillas.
- Spray tortillas lightly with olive oil or avocado oil and sprinkle with a little sea salt or garlic salt.
- Air fry at 350° F for about 7 minutes or until they are just barely golden brown.
- Serve with guacamole, salsa, lime, cilantro, and sour cream.
Notes
If you want to bake instead of air fry, bake at 400° F for 15-20 minutes or until they start to become golden brown.
If using corn tortillas instead make sure to layer tortillas with a moist paper towel and microwave for a few minutes before you fill and roll them up. I like to use Siete almond flour tortillas.
