Easy Sheet Pan Dinner Healthy Recipe

Ingredients
  

  • 2 medium sweet potatoes cubed
  • 4-6 links Amylu Chicken Sausages sliced
  • 10 spears asparagus chopped in 1 in pieces
  • 15-20 brussel sprouts halved
  • 1/4 medium sweet onion diced
  • 1 bell pepper chopped
  • 3 tbsp EVOO or avocado oil
  • 1 tsp paprika
  • 1 1/2-2 tsp oregano
  • 1/2 tsp garlic powder
  • sea salt and pepper to taste
  • feta optional

Instructions
 

  • Pre heat oven to 400°F
  • Chop and prep all veggies and sausage.
  • Line a baking sheet with parchment paper or aluminum foil.
  • Spread all veggies, potatoes, and sausage on pan.
  • Drizzle with oil and sprinkle seasonings on top.
  • Cover the pan with aluminum foil. Bake for 30 min. Then remove cover and stir. Keep cover off and cook another 10 minutes or until potatoes are soft and the sausage is cooked.
  • Optional: Sprinkle with feta and serve.
