Creamy Sausage + Spinach Tortellini Soup Recipe-Both Dairy & Dairy-Free

This Sausage + Spinach Tortellini Soup Recipe is the perfect cozy meal this fall and winter. The juice is so good you could drink it plain and the combination of cheesy tortellini and sausage is absolutely delicious. It’s also packed full of nutrients too making it a win all around!

I make this so both with and without dairy. My husband loves his dairy and my son has an allergy so I thought i’d make it both ways and both are so good, you can’t go wrong with either.

For the dairy-free version, I use the brand Kite Hill foods dairy-free tortellini. I’ve been impressed with their dairy-free products and that they use minimal ingredients. I have seen them at Target, Whole Foods, and Publix. If you have a hard time finding them, you could always make your own but I wanted to keep this meal super simple.

Here’s what you need for this Tortellini Soup:

  • Bone Broth: I love incorporating bone broth wherever I can. It’s full of nutrients and has lots of protein. I use it in place of anything that calls for chicken broth.
  • Milk or Coconut Milk (unsweetened): Any milk here works great. If using a dairy-free alternative, make sure it’s unsweetened. My favorite with this dish is coconut milk but I have also used almond and cashew milk.
  • Onion: I love the flavor a sweet onion adds but any will do here!
  • Bell Pepper: If you’ve made recipes of mine in the past, you know I love incorporating veggies in wherever I can.
  • Carrots: Carrots just go so well with soup and again, more veggies, the better!
  • Spinach: Why not throw in another veggie?
  • Tortellini: I’m not sure if this or the sausage is the star of the show but their combination is so dang good in this Tortellini Soup! You can use any tortellini you like here. I like using the fresh, minimal ingredient one from the refrigerated section. For the Dairy-free version, I like the Kite Hill brand.
  • Chicken Sausage: I like both links or ground sausage in this. The links are definitely less work so that’s usually my go-to!
  • Fresh Parmesan or Mozzarella: This is just an optional add-on to top the soup off but it is so yummy! For dairy-free, I like the dairy-free parmesan.

Creamy Sausage + Spinach Tortellini Soup

Servings 4 bowls

Ingredients
  

  • 1/2 sweet onion diced
  • 2 carrots sliced
  • 1 bell pepper chopped
  • 1/4 cup flour I use Kamut flour but any will work
  • 6 cups chicken bone broth
  • 3/4 cup milk of choice I use unsweetened coconut milk for dairy-free
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp Italian seasoning
  • 1/4 tsp black pepper
  • 4 cloves garlic minced
  • 10 oz tortellini or 18 oz if you like lots of noodles I like the Kite Hill brand for dairy-free or fresh refrigerated for the dairy version.
  • 12 oz chicken sausage links or ground
  • 2 handfuls fresh spinach

Instructions
 

  • Add olive oil to a pot and let heat on medium.
  • Add onion, carrot, and pepper. Cook until onion is translucent, about 3-4 minutes. Add minced garlic and saute for another minute.
  • Add flour and stir until juices have been soaked up.
  • Add bone broth and let cook until it starts to boil.
  • For the sausage, you can do it a couple different ways. I like to slice up the links and throw them in the air fryer for a couple minutes. You could also just slice them up and throw them in with the bone broth while its boiling. If you are using ground sausage, saute it in a pan until cooked thoroughly.
  • Add tortellini and let boil until soft.
  • Add milk, salt, pepper, Italian seasoning, spinach, and sausage if you haven't yet already.
  • Stir until combined and spinach starts to wilt.
  • Optional: Top with fresh grated parmesan or mozzarella.
