Easy Chicken Sausage Pasta Healthy Dinner Recipe

This Easy Chicken Sausage Pasta has been a go-to dinner over here lately. It quick, easy, healthy, and full of flavor so it checks all the boxes. If you haven’t tried Banza pasta before, it’s made with chickpeas! It sounds super weird but they are really yummy! I like them a lot better than regular pasta because I hate the heaviness feeling you get after eating regular pasta. You don’t get that with these. Bonus is they are full of protein and fiber which most people struggle to get enough of in their diet.

My little boy has a dairy allergy. Once we discovered this, I created this meal because I needed to come up with new dinner ideas without any dairy. If you’re not dairy free, a little fresh mozzarella or parmesan on top would be divine!

What you need for this Easy Chicken Sausage Pasta:

  • Banza Pasta noodles: You can use any type of noodles but I love the Banza noodles.
  • Chicken sausage: I love the Al Fresco Maple Chicken Sausages in this. The Flavor pairs so well with the sauce.
  • Spinach: This is definitely optional but I love adding in veggies wherever I can.
  • Sweet onion: Any onion will work but the sweeter the better!
  • Bite sized medley tomatoes: You could use any tomatoes here but I love the flavor the yellow and orange ones bring!

Easy Chicken Sausage Pasta Healthy Dinner Recipe

Ingredients
  

  • 1 box banza pasta
  • 12 oz medley tomatoes cut in half. I use the orange, yellow, and red bite sized combo but any tomatoes will work.
  • 2 chicken sausages sliced into circles
  • 2-3 cups spinach optional
  • 1/4 small sweet onion chopped
  • 2-3 tsp cane sugar optional
  • 1/4-1/2 tsp paprika to taste
  • 1 clove minced garlic
  • salt and pepper to taste
  • 1 tbsp olive oil

Instructions
 

  • Boil banza or pasta of choice in a pot.
  • While the pasta is cooking, in a separate sauce pan, heat 1 tbsp olive oil and add minced garlic. I like to cook my chicken sausage at this same time. I just slice them into circles and throw them in the air fryer for 6-7 minutes at 375°. If you don't have an air fryer you can just throw them in the sauce pan to cook with the sauce.
  • Add diced onion to saue pan with garlic and cook until onion is translucent. Add tomatoes and saute until they are soft enough to easily mash with a utensil. And garlic salt, salt, and pepper to taste. Stir in paprika and cane sugar (optional).
  • Depending on how thick you like your sauce, you can just mash it up with a utensil or if you prefer a thinner sauce, you can blend it. I prefer to mash it.
  • Add in spinach and chicken sausage. Stir until spinach wilts. Drain pasta and add to sauce.
