Boil banza or pasta of choice in a pot.
While the pasta is cooking, in a separate sauce pan, heat 1 tbsp olive oil and add minced garlic. I like to cook my chicken sausage at this same time. I just slice them into circles and throw them in the air fryer for 6-7 minutes at 375°. If you don't have an air fryer you can just throw them in the sauce pan to cook with the sauce.
Add diced onion to saue pan with garlic and cook until onion is translucent. Add tomatoes and saute until they are soft enough to easily mash with a utensil. And garlic salt, salt, and pepper to taste. Stir in paprika and cane sugar (optional).
Depending on how thick you like your sauce, you can just mash it up with a utensil or if you prefer a thinner sauce, you can blend it. I prefer to mash it.
Add in spinach and chicken sausage. Stir until spinach wilts. Drain pasta and add to sauce.
