Easy Greek Meditteranean Chicken Bowl

Ingredients
  

  • 1/4 cup cooked quinoa
  • 4 oz grilled chicken
  • 1-2 oz feta
  • 2 cups spinach chopped
  • 1/2 cucumber chopped
  • 1/4 bell pepper chopped
  • 1/4 cup red onion chopped
  • 3-4 kalamata olives sliced
  • 1/2 cup garbanzo beans baked
For the dressing
  • 3 tbsp honey
  • 3 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1/2 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic salt
  • 2 tsp oregano

Method
 

  1. Blend together all dressing ingredients, set aside.
  2. Assemble all ingredients in a bowl.
  3. Squeeze a little fresh lemon juice over top and sprinkle with a little oregano.
  4. Drizzle dressing over top and mix.

Notes

You can add your garbanzo beans however you like but I love to roasted them in the oven for about 20 minutes with a little garlic salt before adding them to my bowl.
