Easy Greek Mediterranean Chicken Bowl

I have been on a Greek food kick lately. I love a good chicken bowl but what really makes this Greek Mediterranean Chicken Bowl mouth watering, besides the perfect combination of all the different flavors, is the dressing! I love Greek dressing but I am also picky about it so I played around with different ingredients to get the perfect Greek taste with a hint of sweet. It’s so good, you’ll be wanting to like your plate!

What you need for this Simple Greek Mediterranean Chicken Bowl Recipe

  • bell pepper
  • red onion
  • cucumber
  • chickpeas
  • feta
  • kalamata olives
  • grilled chicken
  • quinoa or brown rice
  • spinach

For the Homemade Greek Dressing you’ll need:

  •  honey 
  • red wine vinegar 
  • dijon mustard 
  • olive oil
  • lemon juice
  • garlic salt 
  • oregano

I love to grill up enough chicken for the week, cook a batch of quinoa or brown rice, and chop up the veggies for the week. Then I have have a quick and easy to assemble, but still fresh tasting, lunch ready to go all week!

Easy Greek Meditteranean Chicken Bowl

Prep Time 5 minutes
Servings 1

Ingredients
  

  • 1/4 cup cooked quinoa
  • 4 oz grilled chicken
  • 1-2 oz feta
  • 2 cups spinach chopped
  • 1/2 cucumber chopped
  • 1/4 bell pepper chopped
  • 1/4 cup red onion chopped
  • 3-4 kalamata olives sliced
  • 1/2 cup garbanzo beans baked

For the dressing

  • 3 tbsp honey
  • 3 tbsp red wine vinegar
  • 1 tsp dijon mustard
  • 1/2 cup olive oil
  • 2 tbsp lemon juice
  • 1 tsp garlic salt
  • 2 tsp oregano

Instructions
 

  • Blend together all dressing ingredients, set aside.
  • Assemble all ingredients in a bowl.
  • Squeeze a little fresh lemon juice over top and sprinkle with a little oregano.
  • Drizzle dressing over top and mix.

Notes

You can add your garbanzo beans however you like but I love to roasted them in the oven for about 20 minutes with a little garlic salt before adding them to my bowl. 

This is one of my favorite lunches but it also makes a great dinner too! You can play with the ratios depending on your hunger level. For lunch ill often skip the rice or quinoa and add a little extra when I do it for dinner.

My whole family loves this one because everyone can assemble their own bowls making them easily customizable to everyones taste.
