Healthy High Protein Brownie Cookies

These Brownie Cookies are every chocolate lovers dream! You would have no idea that they’re packed with protein. There is over 12 g of protein PER cookie.

12 grams per cookie people! Who needs a post-workout protein shake when you’ve got cookies? Or if you like things real chocolatey, have it with a glass of Active Stacks protein mixed with your favorite milk. It taste JUST like chocolate milk. I think we should make cookies and chocolate milk post workout a thing.

This protein powder is seriously amazing. I originally tried this protein because of how clean the ingredients are, then once I tasted it, I realized it’s also the best tasting chocolate protein powder I’ve had. Trust me, being a trainer for over 10 years, i’ve tried a lot. It’s amazing as hot chocolate, chocolate milk, and in treats it’s incredible. If you have used protein powder to bake with, you know a lot of powders don’t give it the best taste. That’s not the case with this protein powder. Have you tried it in my Peanut Butter Blondies? I use the vanilla in that one and they are ridiculously good. Definitely a must try after you devour these cookies!

The brownie portion of these Brownie Cookies tastes just like a fudge brownie you know and love. Then, once you add the G2G bar in the middle, it’s the perfect chocolatey peanut butter combination. Just look at that center.

Here’s what’s in the Brownie Cookies

  • Dark chocolate Kodiakcakes mix: I love using this mix. It already has little chocolate chips in the mix so you don’t need to add any to this recipe but feel free to add extra if you’d like.

  • G2G bars: I went off on a rant about the protein and forgot to tell you how amazing these bars are. They are kind of the star of this show. I love having G2G bars on hand. I love them beacause they are a great clean, healthy, high protein snacks that tastes just like a cookie when you warm it up or make your busy life easy for on-the-go. You can make these Brownie Cookies without them, but why would you want to? If you don’t add a G2G bar I would recommend adding either chocolate chips or you could make my Peanut Butter Blondies and put those in the center.
  • Coconut sugar: I love baking with coconut sugar. You can use brown sugar if you prefer, but coconut sugar makes a great healthier alternative with a very similar taste.
  • Peanut butter: I like to use a natural peanut butter. Less is more when it comes to reading ingredient labels.

Ingredients
  

  • 1 cup Dark chocolate Kodiakcakes mix
  • 1 scoop Chocolate protein powder the protein I use is linked above
  • 2 tsp vanilla
  • 2 eggs room temperature, I like to use cage free
  • 1 g2g bar any flavor, linked them above
  • 1/4 cup peanut butter natural
  • 1/3 cup coconut sugar or brown sugar
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt

Instructions
 

  • Mix together room temperature eggs, vanilla, sugar, and peanut butter until well combined.
  • Add Kodiakcakes mix, baking soda, salt, and protein powder and mix. Dough will be slightly sticky.
  • Refregerate dough for 15 minutes or until able to form balls. Separate into 9 pieces.
  • Cut room temperature G2G bar into 9 pieces.
  • Form brownie batter into balls, press your thumb in the center to leave a space for the G2G bar. Stick bar inside and cover up.
  • Place on parchment paper or nonstick pan and bake at 350° F for about 8 minutes.
  • Leave cookies to cool on pan.
