Cubby’s Copycat Clean Eating Steak Salad

This Cubby’s copycat recipe is the perfect date night in!

With my husband being in medical school and having a little one at home, oh and then there’s this thing called Cornoa Virus, we’ve had a lot of dates at home. I am sure you can relate!

I try to come up with fun things to make it feel like we are still going out even when we are stuck at home. For me, this usually involves food. If you’ve followed me long, you know I am a total foodie so there is always good food involved and this Cubby’s copycat recipe is good. I am hear to tell ya, this salad is so yummy! It’s so tastey that you feel like you went out to eat without having to spend all the money. I could eat it every single day and never get sick of it.

Steak Salad

When we lived in Utah there was a restaurant called Cubby’s that made a mouth-watering steak salad that was to die for. I wanted to recreate something similar and let me tell ya, this healthy steak salad recipes is good, like, lick your plate good.

Salads can easily become a not so healthy option with all the toppings and unhealthy dressings. This one is nutrient-packed and full of flavor. The dressing is what makes it and is made with clean ingredients. It’s so good you could drink it!

I make the dressing almost weekly and just keep it in the fridge to have salads throughout the week. It’s like a magic dressing because it somehow is amazing on both sweet and savory salads.

What’s in it:

  • Spinach and arugula mixed– You can use whatever lettuce you like but I love the taste of arugula and I am always adding in spinach for the health benefits.
  • Top sirloin– You can use any type of steak but I prefer top sirloin. I like the thinly sliced ones. They are cheaper and perfect for salads!
  • Hemp hearts– If you are a veteran to my recipes, you know I am always adding in hemp hearts. They are so nutrient-dense. They are also so good on salads to give that little bit of a crunch
  • Bell peppers– You can use any color or any veggie you want here. I am always trying to add more veggies to my meals and bell peppers are great on salads.
  • Feta– I love the flavor feta brings to this salad but you could use any type of cheese here.
  • Green onion– I always have extra green onion from making the dressing so I like to add sliced pieces into my salad.
  • Green onion vinaigrette- This dressing is absolutely delicious! It adds so much to the salad. I love having it on hand to use throughout the week. I will make salads for lunches or add a salad with dinner and this is always my go-to! Keep the leftovers stored in the fridge.

Steak Salad

Best Ever Steak Salad

Total Time 15 minutes
Servings 2

Ingredients
  

For the salad:

  • 6 cups spinach and arugula mix or lettuce of choice
  • 1 bell pepper any color, chopped
  • 2 stalks green onion chopped
  • 2 oz feta crumbled
  • 3 tbsp hemp hearts
  • 3 tbsp pumpkin seeds
  • 8 oz top sirloin thin sliced

For the dressing:

  • 1/3 cup red wine vinegar
  • 1/2 cup extra virgin olive oil
  • 1/3 cup raw cane sugar
  • 1 tsp dry mustard
  • 1 stalk green onion chopped (use only the green part)
  • 1 tsp sea salt
  • 1 tsp poppy seeds

Instructions
 

  • To cook the sirloin, heat skillet on medium-high with a 1 tbsp of olive oil.
  • Once skillet it hot, add sirloin. Spinkle top of meat with disired amount of garlic pepper.
  • Cook 3-4 minutes and then flip steak and sprinkle the other side with garlic pepper.
  • While meat is cooking, put together salad and make the dressing.
  • Separate spinach and arugula mixture into 2 servings.
  • Assemble all the toppings on each salad.
  • For the dressing, blend all ingredients together.
  • Once the steak is fully cooked, let it rest for about 5 minutes. This is usually the perfect amount of time to finish up the dressing and assembling the salads.
  • Slice steak into bite sized pieces and place on top of salad.
  • Drizzle on desired amount of dressing and keep the remaining dressing in the fridge.

This Cubby’s copycat recipe is so quick and easy to make! If you have an air fryer, I have also cooked the steak in there and that makes it even easier.

I love to make homemade artisan bread to serve with it. Add fresh sliced watermelon and you’ve got the perfect summer dish. For me it doesn’t have to be summer to have a salad though. I could eat this all year long!
