The Best Chicken Tacos
We can’t stop eating these Chicken Tacos over here. They are not your average chicken taco. Think more of the taste of fish tacos but with chicken instead and believe me when I say you will be making these on repeat! Not only because of how good they are but you won’t believe how easy these chicken tacos are to make!
The chicken I use for these Chicken Tacos is the same chicken I use to make my orange chicken. I am all about finding ways to make dinnertime more easy. I created the orange chicken recipe at the request of my husband. He wanted not just orange chicken but a breaded orange chicken. If you know me, you know that I then how to find a way to make the breading healthy and gluten free. I couldn’t believe how good it was when it all came together.
I coated the chicken in a mixture or almond and oat flour with a little paprika and garlic salt. You mix it all together and bake it in the oven. The chicken comes out perfectly crisp and the perfect chicken for some many things! It’s great for these tacos, the orange chicken, just as chicken nuggets on it’s own, or it’s perfect to throw in a wrap or on a salad.
Once you have the chicken baked, you can throw it in the freezer, pull it out when your need it for lunch or dinner, pop it in the air fryer, and you are good to go! Perfect for those busy nights!
Here’s what you need for these Chicken Tacos:
- chicken breast
- almond flour- any type of flour should work here but if you are keeping it gluten free, we love the combo of almond flour and oat flour.
- oat flour- I made my own by just blending up oats.
- garlic salt
- paprika
- tortillas- we love Siete almond flour tortillas but any will work great!
- shredded lettuce or coleslaw- I love using chopped brussel sprouts, carrots, and broccoli to get more veggies into it.
- sour cream- we love the brand Good Culture. It’s made with good ingredients and it’s lactose free! If
- lime juice
- hot sauce
The Best Chicken Tacos
Ingredients
- 6 tortillas
- 16 oz chicken breast chopped into bite sized pieces
- 1/8 cup almond flour
- 1/4 cup oat flour
- 1/2 tsp garlic salt
- 1/2 tsp paprika
- 1/4 tsp hot sauce
- 2 wedges lime juice
- 2 cups lettuce or coleslaw
- 1/2 cup sour cream I use Good Culture lactose free
Instructions
- Pre heat oven to 375℉
- Chop chicken into bite sized pieces and places in a bowl.
- Sprinkle chicken with garlic salt, almond flour, oat flour, and paprika.
- Mix until chicken is fully coated.
- Dump onto baking sheet and bake for about 20-24 minutes, until chicken is fully cooked.
- Fill tortillas with chopped lettuce or coleslaw mix.
- Once chicken is done, place on top of lettuce.
- In a bowl, mix together sour cream, lime juice, and garlic salt + hot sauce to taste.
- Drizzle sauce on top of tacos and squeeze with fresh lime juice.
