Easy Chicken Taquitos- Baked or Air Fried

I had to get you this Easy Chicken Taquitos recipe before Cinco de Mayo. They are so delicious and easy plus It’s the perfect festive meal!

These are always a good go-to meal when I know I’m going to be short on time. You can even make them ahead of time and freeze them if you want. I keep saying I’ll make a bunch to freeze and then they never last long enough to get to the freezer. They are so good!

When it comes to dinner, I like to find ways to make it as easy as possible so for these, I like to have the chicken ready ahead of time. You can make shredded chicken in the instant pot or crock pot or go even easier and grab a rotisserie chicken! In a pinch i’ve even used canned chicken. Once you have the chicken prepped, they are super simple with simple ingredients.

We’ve got some food allergies at our house so as a bonus, they are both gluten-free and dairy-free!

Here’s what you’ll need for these Easy Chicken Taquitos:

  • Shredded chicken: I usually do chicken but shredded pork would also be amazing!
  • Bell pepper: You know I am all about veggies and adding them in wherever I can.
  • Sweet onion: Any onion will work but I love the flavor sweet onion adds.
  • Shredded cheese: Full disclosure, I usually do these without cheese since we have some dairy allergies at my house and they are still so good. We’ve also used dairy-free cheese. We like the Violife brand!
  • Tortillas: We love using the Siete almond flour tortillas. I don’t cook them before rolling them up. You could use any type you like though. I have tried flour and corn tortillas and they bot work great! Make sure if you do corn, layer the tortillas with a moist paper towel and microwave for a few seconds before attempting to roll. Works like a charm. Trust me, I learned the hard way.
  • Seasoning: My go-to with most mexican dishes is a combination of cumin, paprika, chili powder, and garlic.

Toppings:

The toppings are the best part so don’t forget those! Here’s what we love to top them with:

  • Guacamole
  • Salsa
  • Cilantro
  • Lime
  • Sour Cream– we make a dairy-free cashew sour cream

Easy Chicken Taquitos

Prep Time 8 minutes
Cook Time 7 minutes
Total Time 15 minutes

Ingredients
  

  • 3 cups shredded chicken (cooked)
  • 1 bell pepper chopped
  • 1/4 sweet onion diced
  • 1//2 cup shredded cheese or dairy-free
  • 1 clove minced garlic
  • 1/4 tsp chili powder
  • 1/4 tsp cumin
  • 1/4 tsp paprika
  • 1 tbsp olive oil
  • 8-10 tortillas

Method
 

  1. Heat saute pan to medium and add olive oil and minced garlic.
  2. Add chopped bell peppers and onion and cook until onions are translucent. About 4-5 minutes.
  3. Add shredded chicken to a bowl. Add cheese, cumin, paprika, chili powder, and salt and pepper to taste. Add the cooked peppers and onions and mix until combined.
  4. Spoon about 3 tbsp of mixture onto the lower third of a tortilla. Roll up tightly and lay tortilla seam side down on air fryer sheet. Repeat with all tortillas.
  5. Spray tortillas lightly with olive oil or avocado oil and sprinkle with a little sea salt or garlic salt.
  6. Air fry at 350° F for about 7 minutes or until they are just barely golden brown.
  7. Serve with guacamole, salsa, lime, cilantro, and sour cream.

Notes

If you want to bake instead of air fry, bake at 400° F for 15-20 minutes or until they start to become golden brown. 
If using corn tortillas instead make sure to layer tortillas with a moist paper towel and microwave for a few minutes before you fill and roll them up. I like to use Siete almond flour tortillas.
