Easiest Beef Stroganoff Recipe + Creamy, Healthy, & Dairy-Free
This Beef Stroganoff recipe quickly became a favorite at our house. I feel like I can barely call it a recipe because it’s that easy to throw together!
With my son being completely dairy-free, i’ve had to get creative with some meals. I threw this together one night and after tasting it, I knew it’d be one we have on repeat.
You know that heaviness feeling that comes with eating pasta? I am not a fan of that so I’ve never been a huge pasta person. Once I heard of Banza noodles, it was a game changer for me. They are noodles made from chickpeas. You don’t get the heaviness feeling that typically comes with pasta and I love that they’re loaded with protein and fiber! I pretty much use them in places of any noodles. If you’ve tried my Chicken Sausage Pasta, it’s the same noodles I use there. Most grocery stores carry them so they are pretty easy to find.
What’s in my Beef Stroganoff
- Banza noodles- We already discussed me love for these noodles. They are a staple I like to always keep on hand.
- Primal Kitchen Foods Cashew Alfredo Sauce- I am always a little hesitant to buy dairy-free products for the first time because you never know what the taste will be like but this sauce is so good!
- Lean Ground Beef- I like this meal best with ground beef but have also used ground chicken or turkey and they work great too! I recently tried Butcher Box and have been blown away by the quality of their meat. If you want to check them out, this link will give you a discount on your first box.
- Worcestershire Sauce
- Dijon Mustard
- Green Onion
Easiest Beef Stroganoff + Creamy, Healthy, & Dairy-Free
Ingredients
- 16 oz Lean Ground Beef
- 8 oz box Banza Noodles
- 1.5 cups Primal Kitchen Foods Cashew Alfredo Sauce
- 2 tbsp Worcestershire Sauce
- 1/2 tbsp Dijon Mustard
- 2 stocks Green Onion Slice and only use the green part
- Salt + Pepper + Garlic salt
Instructions
- Sauté ground beef in pan on medium heat until meat is cooked all the way through. About 5-7 minutes.
- While meat it cooking, boil a pot of water and cook Banza noodles. If you've never cooked with these before, they cook a lot faster than regular noodles. They only need to boil about 3-4 minutes. Stop once they get soft or they will become mushy.
- Strain and rinse noodles with water.
- Dump noodles into pan with cooked ground beef. Add in Primal Kitchen Sauce, worcestershiresauce, dijon, and salt, pepper and garlic salt to taste. Mix until warm.
- Top with sliced green onion. Optional: Fresh parsley also goes great on top but I usually just do the green onion.
Dinners that only take 10 minutes but taste like you’ve spent hours are my kind of meals! I love how quick and easy this dinner recipe is and can’t wait to here what you think.
