Grain-Free Pumpkin Spice Waffles

My mouth is drooling just thinking about these grain-free pumpkin spice waffles. They have the perfect subtle amount of pumpkin and spice to jazz up your regular waffle game but not so much that it’s overpowering with pumpkin. It’s the perfect time of year for these pumpkin waffles but they are so good, we eat them all year long!

Have you ever tried the viral Trader Joes pumpkin waffle mix?! These taste JUST like those but dare I say even better. Not to mention the ingredients are cleaner so we love that! They are both gluten and dairy-free for those that need it but you would have no idea! I always try and double the batch to have leftovers but every time I do, everyone ends up devouring even more.

What’s in these Grain-Free Pumpkin Spice Waffles

  • Almond flour
  • Pumpkin puree
  • Organic maple syrup
  • Arrowroot powder
  • Almond milk
  • Coconut oil
  • Eggs
  • Vanilla
  • Baking powder
  • Cinnamon
  • Ginger

How to freeze waffles for later

These waffles save great in the freezer and make the perfect yummy breakfast for those busy mornings. To freeze these grain-free pumpkin spice waffles, lay them out flat on a baking sheet or large plate and place in the freezer for about an hour or so. After about an hour they should be frozen enough to store in a bag. This way the keep their shape and then you can just pop one in the toaster when you want one!

Grain-Free Pumpkin Spice Waffles

Cook Time 10 minutes
Servings 5

Ingredients
  

  • 1 2/3 cup almond flour
  • 2 eggs
  • 1/2 cup almond milk
  • 1/2 cup pumpkin puree
  • 1/4 cup maple syrup
  • 1/2 cup arrowroot powder or cornstarch
  • 2 tsp vanilla
  • 1 1/2 tsp cinnamon
  • 1/4 tsp ginger
  • 2 tsp baking powder
  • 3 tbsp coconut oil

Instructions
 

  • Mix all ingredients until combined.
  • Make batter into waffles or pancakes.
  • Top with organic maple syrup.
