Easy Sheet Pan Dinner Healthy Recipe -An Easy Way to Save on Groceries
This easy Sheet Pan Dinner is my go-to when I don’t know what to cook for dinner! It’s quick, easy, and I usually have everything on hand.
When I do my grocery shopping I’ve been trying to stick to my staples. This has helped me keep my grocery bill a little lower with how crazy prices have gotten. My staples are usually whatever fruits and veggies are in season, good quality lean meat, and some of our favorite carbs. I used to plan my meals out ahead of time. I try not to waste any of the food I buy so in trying to use everything up, this meal is what I came up. It is so yummy and packed with lots of good nutrients!
What you’ll need for this Easy Sheet Pan Dinner
- Chicken Sausage: I love using the Amylu chicken sausages for this meal. This brand in particular is my favorite but Aidells is another good brand if you can’t find it. Chicken sausage is one of my staple meats. They are easy to throw in the air fryer for a quick lunch. I use them in a lot of my other dinner recipes too. If you haven’t tried my Chicken Sausage Pasta yet or my Creamy Sausage and Spinach Tortellini Soup, be sure to check them out. They are some other yummy, easy dinners I use them for.
- Sweet Potatoes: Sweet potatoes make this meal a lot more filling! I have also used butternut squash and it’s just as delicious if you want something a little lighter.
- Veggies: Any of your staple veggies will work but I usually do asparagus, brussel sprouts, bell peppers, and onion. I love this combo but I’ve also thrown in just whatever veggies I had left from the week.
- Spices and EVOO: All you’ll need is a little extra virgin olive oil or avocado oil. Then some garlic, paprika, oregano, and salt + pepper.
Easy Sheet Pan Dinner Healthy Recipe
Ingredients
- 2 medium sweet potatoes cubed
- 4-6 links Amylu Chicken Sausages sliced
- 10 spears asparagus chopped in 1 in pieces
- 15-20 brussel sprouts halved
- 1/4 medium sweet onion diced
- 1 bell pepper chopped
- 3 tbsp EVOO or avocado oil
- 1 tsp paprika
- 1 1/2-2 tsp oregano
- 1/2 tsp garlic powder
- sea salt and pepper to taste
- feta optional
Instructions
- Pre heat oven to 400°F
- Chop and prep all veggies and sausage.
- Line a baking sheet with parchment paper or aluminum foil.
- Spread all veggies, potatoes, and sausage on pan.
- Drizzle with oil and sprinkle seasonings on top.
- Cover the pan with aluminum foil. Bake for 30 min. Then remove cover and stir. Keep cover off and cook another 10 minutes or until potatoes are soft and the sausage is cooked.
- Optional: Sprinkle with feta and serve.
